LVVR is a méthode champenoise, or traditional method sparkling wine, produced entirely within the Lodi appellation, a renowned wine region in California. This meticulous production process ensures that no part of the production is outsourced, allowing for complete quality control. Every aspect of the winemaking process is overseen by Owner and Winemaker, Eric Donaldson, ensuring that each bottle meets his exacting standards. The grapes used in LVVR sparkling wines are sourced exclusively from vineyards within the Lodi appellation, known for its ideal grape-growing conditions.
LVVR sparkling wines are aged lightly on the bottle lees, a traditional practice that helps develop complex flavors, prior to riddling and disgorging. Riddling involves gently rotating the bottles to consolidate the sediment, which is then removed through disgorging, leaving the wine crystal clear.
The méthode champenoise is celebrated for creating elegant and long-lasting sparkling wines, as the bubbles are produced through natural fermentation in the bottle. This fermentation process takes significantly longer than other methods, resulting in much finer, more delicate bubbles that enhance the wine’s texture and flavor profile.
